RECIPES WITH - SPELLED
Spelled is a very ancient cereal. Basic food for the Romans it was considered a very precious commodity. It was in fact used as a bargaining chip and offered as a propitiatory gift to the Gods. Spelled is rich in fiber and protein and the pearled one, from which the external giumella has been removed, keeps its properties almost unchanged. Pearl spelled cooks in 20/25 minutes without the need to soak.
- Spelled Salad -
Wash the spelled well and put it in a pot with cold salted water. Cook it for about 25 minutes after it reaches boiling point; drain and leave to cool. In the meantime, put the oil, the crushed garlic cloves and the cherry tomatoes cut into small cubes, the chopped pitted olives, the basil, salt and chilli pepper to taste in a bowl. Leave to macerate for at least 30 min. Combine everything with the spelled and finally season with salt, mix well and serve.
Ingredients
g. 150 spelled grains,
n. 6 ripe tomatoes,
n. 15 black olives,
n. 10 basil leaves,
n. 4 cloves of garlic oil,
salt, chili pepper.
- Spelled Soup -
Soak the spelled for 30 minutes. Chop the pancetta and fry it in olive oil together with a pinch of thyme, 2 cloves of garlic and the finely chopped onion. Leave to brown, remove the garlic and add the peeled tomatoes, a sprig of parsley and some basil leaves. Leave the sauce to reduce for a few minutes, add the vegetable stock and bring to the boil. Pour in the spelled and cook over a moderate heat for about 30 minutes, stirring constantly and seasoning with salt and pepper. Leave the soup to rest and serve it warm with the addition of raw olive oil and seasoned pecorino cheese.

g. 150/200 of spelled,
g. 300 ripe tomatoes,
g. 70 bacon,
seasoned pecorino cheese as required,
n. 2 garlic cloves,
l onion,
1.5 liters of vegetable broth,
parsley,
basil,
thyme,
olive oil,
salt and pepper.
- Spelled and Ricotta Cake -
Cook the farro very slowly in the milk with sugar, cinnamon and vanilla, stirring often until completely cooked. If it is too thick, add more hot milk. Separately, in a bowl, beat the egg yolks and add the flour, ricotta, raisins, grated lemon, liqueur and salt, mix well until the mixture is smooth. Then add the cooked spelled and mix everything together. Add the whipped egg whites and mix, making sure it does not go flat. Put everything in a buttered mold and cook in the oven at 180° for 40 minutes.

g. 300 of fresh ricotta,
g. 200 spelled grains,
g. 100 spelled flour (in the absence of wheat flour),
2 liters whole milk n. 4 eggs,
n. 1 sachet of vanilla,
n. 3 spoons of sugar,
g. 150 sultanas,
1 grated lemon peel,
n. 1 shot of COINTREAU,
n. 1 teaspoon of cinnamon,
a pinch of salt.
